Shortbread Cookies

Ingredients

  • 300 g flour
  • 1 tsp Baking powder
  • 225 g butter
  • 225 g sugar
  • 2 Eggs
  • 1 pinch Organic lemon zest
  • 1 vanilla bean (pulp)
  • 1 pinch salt
  • flour (for working)
  • coarse sugar (for sprinkling)

Instructions

    Sift the flour with the baking powder onto a work surface. Spread the butter pieces around the edge. In the center add the sugar, eggs, lemon zest, vanilla pulp and salt, then knead quickly into a smooth dough. Wrap in cling film and chill for about 30 minutes.

    Preheat the oven to 180 °C fan. Line a baking tray with parchment paper or grease it lightly.

    Roll out the dough on a floured surface to a thickness of 4–5 mm and cut shapes as desired. Place on the tray and sprinkle with sugar. Bake in the oven for about 10 minutes until light yellow.

    Cool on a wire rack.
