Ingredients

  • 1 Banana
  • 2 tsp lemon juice
  • 400 g silken tofu
  • 200 ml soy cream
  • 0.5 tsp agar-agar
  • 1 vanilla bean (pulp)
  • 40 g white cane sugar (+4 tbsp for caramel)
  • Vanilla beans (for garnish)

Instructions

    Peel and chop the banana. Blend with lemon juice, tofu, soy cream, agar-agar, vanilla pulp, and cane sugar until smooth.

    Transfer the mixture to a saucepan, bring to a boil, and cook for 1–2 minutes while stirring vigorously. Divide into four ramekins and refrigerate for 2 hours.
