Fruit Soup with Cinnamon

Ingredients

  • 4 untreated oranges
  • 1 lemon
  • 2 pears
  • 2 Apples
  • 150 g cranberries
  • 2 tbsp brown sugar
  • 40 ml orange liqueur
  • 400 ml apple juice
  • 1 cinnamon stick

Instructions

    Peel the zest off one orange, then peel all oranges (including white skin). Cut out the fillets and catch the juice. Squeeze the remaining fruit pulp. Juice the lemon and add the juice to the orange juice.

    Peel the pears and apples, quarter them, remove the core, and dice the fruits. Wash and drain the cranberries. Caramelize the sugar in a pot and deglaze with the liqueur, orange-lemon juice, and apple juice.

    Add the cranberries and cinnamon and simmer until the sugar has dissolved. Add the orange zest and all fruits to the soup, remove from heat, and serve either warm or chilled.
