Ingredients
- 1.2 kg red grapes
- 200 ml red wine (e.g., Pinot Noir)
- 1 untreated orange
- 2 cardamom pods
- 1 kg gelatin sugar
- 40 ml grappa

Rinse the grapes, strip off stems and lightly mash them in a pot with a potato masher. Pour in the wine and bring to a boil. Reduce heat and simmer gently for about 20 minutes until the fruit breaks down. Wash the orange hot and slice it. Add the cardamom to the grapes and let cool. Then pour into a cloth-lined strainer and drain. Catch the juice in a pot and press the fruit.

Measure the juice and add an equal amount of sugar. Boil while stirring, then simmer for about 5 minutes until bubbling (perform a gelatin test). Add the grappa, fill prepared glasses immediately, seal, and let cool.
