Ingredients

  • 125 g soft butter
  • 50 g shallots
  • 1 clove garlic
  • 50 ml robust red wine
  • 50 ml Vegetable broth
  • 0.5 tsp honey
  • 0.5 bunch Parsley
  • 1 pinch salt
  • 1 pinch pepper
  • 1 pinch cumin
  • parsley (for garnish)

Instructions

    Beat the butter in a mixing bowl until fluffy. Peel and halve the shallots and garlic, then finely dice or mince them. Heat the onions with red wine and broth in a saucepan. Add honey and simmer for about 20 minutes to reduce. Set aside and let cool.

    Wash and dry the parsley, remove leaves, finely chop, and stir into the onion mixture. Season with salt, pepper, and a pinch of ground cumin. Mix with the fluffy butter. Spoon into small bowls and chill for about an hour. Serve garnished with shallot slices and parsley.
