Tomato Sauce for the Thermomix

This tomato sauce contains fresh ingredients and a hint of Indian heat.

Ingredients

  • 4 garlic cloves (peeled)
  • 1 onion (quartered)
  • 2 roughly chopped zucchini
  • 1 handful oregano
  • 800 g diced tomatoes
  • 60 g olive oil
  • 60 g tomato paste
  • 3 tbsp balsamic vinegar
  • 2 tsp cane sugar
  • 2 tsp salt
  • 1 pinch ground chili
  • 0.5 tsp ground turmeric
  • 0.5 tsp ground ginger
  • 0.5 tsp ground cumin
  • 0.5 tsp coriander

Instructions

    Blend garlic, onion, zucchini and oregano for 30 seconds on speed 8.

    Add tomatoes, olive oil, tomato paste, balsamic vinegar, cane sugar, salt, chili, turmeric, ginger, cumin and coriander.

    Simmer the sauce at 100°C on speed 2 for 40 minutes without the inner lid but with the steaming basket as splash guard.

    Blend again for 15 seconds on speed 10, remembering to place the inner lid before starting.

  5. 5.

    Immediately transfer the sauce into jars, seal, invert and let cool standing on the lids. The sauce can be stored in the refrigerator for up to 6 months.
