A fresh sauce recipe featuring mustard and dill, perfect for pairing with fish.

Ingredients

  • 1 Shallot
  • 100 g celery
  • 1 Garlic clove
  • 2 tbsp butter
  • 2 tbsp flour
  • 200 ml white wine
  • 200 ml heavy cream
  • 2 tbsp crème fraîche
  • 1 tsp Honey
  • 1 tbsp sharp mustard
  • 1 bunch dill
  • Salt

Instructions

    Peel and finely chop the shallot, celery, and garlic. Sauté in hot butter and dust with flour. Cook until colorless, then deglaze with white wine.

    Reduce to about half, then blend smoothly. Add cream and simmer until thickened, then stir in crème fraîche and season with honey, mustard, and salt.

    Finally add chopped dill and serve, for example, over fish.
