Ingredients

  • 4 fillets (of red snapper, about 180 g each)
  • juice of one lime
  • Salt
  • pepper (ground)
  • 1 chili pepper
  • 1 ripe Mango
  • 1 Shallot
  • 0.5 bunch fresh cilantro
  • 1 red bell pepper
  • 3 tbsp orange juice
  • 4 tbsp oil
  • flour (for dusting)
  • cilantro leaves (for garnish)
  • lime slice (for garnish)

Instructions

    Wash and pat dry the fish fillets, then season with salt, pepper, and lime juice. Wash the chili pepper, slit it lengthwise, deseed, and finely chop. Peel the mango, remove the flesh from the pit, and dice finely. Capture the juice.

    Peel and finely dice the shallot. Wash cilantro, shake dry, and chop leaves. Wash bell pepper, deseed, remove white membranes, and cut into ~1/2 cm cubes.

    Combine chili, mango, bell pepper, shallot cubes, and cilantro with orange juice and captured mango juice; season with pepper.

    Dust fish fillets lightly with flour and sear in a hot pan with oil for about 3 minutes per side. Transfer to warmed plates, spoon the mango salsa over them, garnish with cilantro leaves and lime slices, and serve.
