Rapunzel with Cheese and Olives

Ingredients

  • 300 g lamb's lettuce
  • 200 g green, pitted olives
  • 200 g cheese (block, e.g., Emmental)
  • 4 tbsp wine vinegar
  • 2 tbsp lemon juice
  • 2 tbsp coarse Dijon mustard
  • 6 tbsp Olive oil
  • Salt
  • Pepper (freshly ground)

Instructions

    Rinse the lamb's lettuce, wash, trim and spin dry. Drain the olives well and slice them. Cut the cheese into thin strips or shave it.

    For the dressing, combine the vinegar with the mustard and lemon juice in a tall container and whisk in the oil. Season with salt and pepper.
