Thick Bean Puree

The thick bean puree by Spoonsparrow is quick to prepare, tastes great and delivers a solid portion of protein.

Ingredients

  • 300 g thick beans
  • 3 Garlic cloves
  • 4 tbsp olive oil
  • 1 tsp cumin (ground)
  • 1 pinch chili flakes (finely ground)
  • 0.5 lemon (juice)
  • Salt
  • Pepper

Instructions

    Soak the beans overnight in plenty of cold water and let them swell. Peel and chop the garlic, then combine with 1 l water and the drained beans in a pot and bring to a boil. Cook over high heat for about 30 minutes.

    Drain the beans and garlic through a sieve, letting them drip dry. Heat the oil in a pan and toast the spices, deglaze with lemon juice, then transfer the mixture along with the beans to a blender and puree. Season with salt and pepper and serve in small bowls.
