Ingredients

  • 400 g red mullet fillet
  • 2 tbsp lemon juice
  • 2 small white onions
  • 4 tomatoes
  • 1 bundle arugula
  • Salt
  • Pepper
  • 2 tbsp pesto
  • 1 tbsp chopped capers
  • 2 tbsp butter
  • 1 tsp chopped herbs

Instructions

    Wash and dry the arugula, then separate into leaves. Peel the onions, halve them, and break into pieces. Wash the tomatoes and dice them.

    Sauté the onions in butter until translucent, remove and set aside. Brown the fish fillets in butter, season with salt and pepper, and drizzle with lemon juice. Add the tomatoes, herbs, and onions to the pan and stir through. Taste and adjust seasoning.

    Arrange the arugula on a plate, place the fish fillets on top, and pour the onion-tomato-butter mixture from the pan over them. Drizzle some pesto on top and sprinkle capers.
