Ingredients

  • 12 red mullet fillets
  • 6 potatoes
  • 1 Garlic clove
  • 1 egg yolk
  • 1 tsp Dijon mustard
  • 200 ml olive oil
  • 1 tin saffron strands
  • 1 pinch allspice
  • Salt
  • black pepper (freshly ground)

Instructions

    Wash the potatoes and scrub them under running water, then boil in their skins for about 20 minutes. Cut the boiled potatoes lengthwise into halves. Season the red mullet fillets with salt and pepper and steam them in a high pan with a steamer insert.

    Whisk together oil, egg yolk, salt and pepper to make a mayonnaise. Stir in allspice and saffron. Press the garlic into the mixture and stir well.

    Brush each potato half with the mayonnaise and top with a red mullet fillet. Garnish with basil or parsley leaves before serving.
