Red Barbel with Rocket

Ingredients
- 4 red barbel fillets with skin 120-150 g (well cleaned)
- 300 g rocket
- 1 jar caper berries
- 1 Garlic clove
- 4 tbsp olive oil
- 2 tbsp white balsamic vinegar
- butter clarified (for frying)
- Salt
- Pepper
- 2 lemons
- 2 tbsp clarified butter
- 0.5 baguette

Wash the lemons, grate a little zest, remove the zest with a sharp knife and cut into 12 slices, then squeeze out the rest of the juice. Season the fish fillets with lemon juice, salt and pepper, let sit for 10 minutes. In the meantime wash, rinse and drain the rocket.

Cut the baguette at an angle into 4 long slices. Peel the garlic clove, blend with 2 tbsp oil and brush the baguette slices. Fry the baguette slices slowly in a grill pan until crisp. Sear the fish fillets skin side down for 1/2-1 minute, then cook on the skin side for about 3 minutes.

Marinate the salad with balsamic vinegar, olive oil, remaining garlic mixture, salt and pepper and taste. Arrange the salad on preheated plates, add the baguette slices and place the fish on the baguette slices with lemon slices and caper berries, garnish with chives and serve.
