Red Cabbage with Apple

Ingredients
- 1 head red cabbage (about 1.2 kg)
- 300 g cranberries
- 1 onion
- 1 tart apple
- 2 tbsp olive oil
- 100 ml red wine vinegar
- Salt
- Pepper
- a pinch of brown sugar
- 0.25 tsp ground cloves
- 2 Bay leaves
- 1 Tbsp parsley

Wash, dry, and thinly slice the cabbage; remove the core. Dice the apple after washing, drying, peeling, de-seeding, and cutting into small cubes.

Peel and finely dice the onion. Heat olive oil in a pan, sauté the cabbage and onion over medium heat for 5–6 minutes. Add vinegar and 100 ml water, then add the apple and spices. Cover and simmer for 40–45 minutes. Fifteen minutes before finishing, add the cranberries to cook with.

Wash, dry, and finely chop parsley. Sprinkle it over the cabbage and apple mixture and serve.
