Steamed Cucumber Vegetable
Steamed cucumber and carrot vegetable: Cucumbers are extremely low in calories and therefore popular as a companion during dieting.
Ingredients
- 250 g carrots (2 carrots)
- 400 g salad cucumber (1 cucumber)
- 70 ml classic vegetable broth
- 4 stems basil
- Salt
- Pepper
- 15 g parmesan (1 piece)
Instructions

Wash and peel the carrots. Thoroughly wash the cucumber, halve it lengthwise and remove seeds with a teaspoon. Cut halves crosswise.

Slice carrots and cucumber into long, very thin strips using a vegetable peeler or paring knife.

Bring vegetable broth to a boil in a pot. Steam carrot strips covered over low heat for 4 minutes.

Rinse basil, shake dry and pluck leaves. Set aside some for garnish; cut remaining leaves into fine ribbons.

Add cucumber strips to carrots and steam covered for 2 more minutes. Season with salt and pepper, fold in basil ribbons.

Grate parmesan into very thin shavings. Arrange cucumber-carrot mixture on two plates, sprinkle with parmesan and garnish with basil leaves.
