Ingredients

  • 1 small head red cabbage (ca. 1 kg)
  • 2 tbsp Apple cider vinegar
  • 2 tbsp freshly squeezed orange juice
  • 1 tbsp honey
  • Salt
  • 3 spring onions
  • 2 Apples
  • 3 tbsp grape seed oil
  • 8 small sausages
  • medium‑spicy mustard

Instructions

    Quarter the cabbage, remove the core and strip off the outer leaves. Slice or shred finely and combine with vinegar, orange juice, honey and salt in a bowl; cover and let stand for about 30 minutes. Wash, trim and slice spring onions diagonally into rings. Peel one apple, quarter it, remove the core and grate. Mix the oil, spring onions and grated apple into the salad and season with salt.

    Skewer the sausages and warm them in boiling water.

    Wash the remaining apple, pat dry, quarter it, remove the core and cut into wide strips.

    Arrange the salad on plates, top with the warmed sausages, and add a slice of apple with a dollop of mustard to each plate. Serve immediately.
