Red Cabbage Salad with Radicchio

The red cabbage salad with radicchio from Spoonsparrow tastes wonderfully aromatic and brings many vital nutrients to the plate.

Ingredients

  • 50 g dried cherries
  • 4 tbsp apple cider vinegar
  • 4 tbsp linseed oil
  • 2 tbsp lemon juice
  • Salt
  • Pepper
  • 800 g red cabbage
  • 400 g radicchio
  • 1 apple
  • 1 Red Onion
  • 1 handful herbs (5 g each; dill, parsley)
  • 30 g nut kernels (2 tbsp)

Instructions

    For the dressing finely chop cherries and mix with vinegar, oil, lemon juice, salt and pepper.

    Clean, wash, halve cabbage and radicchio, cut out stems, shred or julienne into fine strips.

    Wash apple, quarter, core and slice thinly. Peel onion and cut into strips.

  4. 4.

    Wash herbs, pat dry, pluck leaves; set aside some dill for garnish, chop the rest.

    In a bowl combine cabbage, radicchio, apple, onions with half the dressing. Plate on dishes or a large platter and drizzle remaining dressing over.

    Chop nuts, scatter over salad and garnish with remaining dill.
