Fruitful Sauerkraut Salad
A fruity sauerkraut salad from Spoonsparrow blends sweet fruit with savory cabbage – try it yourself.
Ingredients
- 500 g Sauerkraut
- 1 pineapple
- 3 spring onions
- 2 tbsp fresh chopped coriander
- 2 Avocados
- 2 tbsp lemon juice
- 1 tsp orange zest
- 50 ml orange juice
- 1 tsp Honey
- 150 g whipping cream
- 2 tsp Curry powder
- Salt
- Pepper (freshly ground)
Instructions

Loosen the sauerkraut with a fork and roughly chop it.

Peel the pineapple thoroughly, quarter it lengthwise, remove the core. Cut each quarter again lengthwise and then into small pieces crosswise.

Trim, wash, and slice spring onions into thin rings or strips. Dissolve honey in 6 tbsp orange juice and mix with sour cream, curry powder, orange zest, salt, and pepper.

Combine sauerkraut, pineapple, spring onions, and 1 tbsp coriander with the dressing and let rest for about 30 minutes.

For serving halve the avocados and remove the pit.

Peel the avocados, cut the flesh into narrow strips, and immediately drizzle with lemon juice.

Arrange the fruit‑laden sauerkraut salad on plates, place avocado ribbons decoratively on top, and grind pepper over it. Sprinkle remaining coriander before serving.
