Red Cabbage Orange Salad

The colorful red cabbage orange salad from Spoonsparrow strengthens the immune system thanks to its rich vitamins.
Ingredients
- 700 g red cabbage (1 small head)
- 2 oranges
- 50 g dried apricots
- 4 tbsp vinegar (60 ml)
- 2 tbsp pumpkin seed oil (20 ml)
- 1 untreated orange (juice)
- 0.25 bunch chives
- 0.5 tsp caraway seeds
- Pepper
- Salt

Quarter the cabbage, remove the core and finely shred it. Season the shredded cabbage with salt, pepper, and caraway seeds. Make a dressing from vinegar, oil, and orange juice and pour it over the cabbage.

Trim the ends of the oranges, separate the peel from the flesh with a sharp knife, and cut out segments from the oranges.

Toss the cabbage vigorously by hand. Slice the chives into small rounds. After about 15 minutes of marinating, combine the orange segments and dried apricots with the cabbage. Serve the red cabbage orange salad on small plates and sprinkle with chives.
