Mango Kale Salad

The mango salad from Spoonsparrow is a vitamin kick with bite – fresh, fruity and full of power.

Ingredients

  • 200 g kale
  • Salt
  • 2 limes (juice)
  • 1 tbsp rice syrup
  • 5 tbsp Rapeseed Oil
  • 1 tsp Sesame oil
  • 1 large mango (≈500 g)
  • 2 small avocados (≈150 g each)
  • 3 tbsp hazelnuts (≈15 g)
  • 5 Lollo Rosso leaves
  • Pepper

Instructions

    Wash the kale, remove the stems and boil in salted water for about 5 minutes. Cool under cold running water and drain well.

    Combine the kale with lime juice, rice syrup and both oils. Peel the mango, cut the flesh from the pit into cubes. Halve the avocados, scoop out the flesh with a spoon and cube it as well.

    Halve or roughly chop the hazelnuts. Wash the Lollo Rosso leaves, pat dry and tear them apart. Mix all prepared ingredients together and season the mango salad with salt and pepper.
