Red Berry Compote
A delightful dessert featuring fresh berries and a creamy vanilla topping from Spoonsparrow.
Ingredients
- 600 g mixed berries (strawberry, raspberry, blueberry, currant)
- 500 ml cherries
- 3 tbsp starch
- 4 tbsp sugar (to taste)
- 1 tsp grated lemon zest
- 250 g whipping cream
- 1 Vanilla bean
- 1 tsp starch
- 1 tbsp sugar
- lemon balm leaf

Wash, clean, and drain the berries. Cut strawberries into small pieces if needed. Whisk starch with a little cherry juice until smooth.

Bring remaining cherry juice with sugar and lemon zest to a boil in a pot, add the berries and simmer for about 3 minutes, then stir in the whisked starch, bring back to a boil, and let thicken. Remove from heat, cool, and chill in the refrigerator.

For the vanilla cream, split the vanilla bean lengthwise and scrape out the seeds. Whisk starch with a small amount of cream until smooth. Boil the remaining cream with the vanilla bean, seeds, and sugar for about 2 minutes, then stir in the whisked starch, bring to a boil, and let thicken slightly. Cool the vanilla cream.

Distribute the berry compote into dessert bowls, spoon some vanilla cream over each, and garnish with lemon balm leaves before serving.
