Ingredients

  • 400 g kiwi flesh
  • 100 g sugar
  • 1 lemon (juice and zest)
  • 20 ml kiwi liqueur
  • 125 ml white wine
  • 1 Egg white
  • sliced kiwi pieces (and cocktail cherries for garnish)
  • cocktail skewer
  • 2 tbsp whipped cream
  • lemon balm leaf

Instructions

    Puree the kiwi flesh and strain through a sieve.

    Reduce sugar with 5 tbsp water to a syrup, then let cool.

    Stir the syrup into the kiwi puree, lemon juice and zest, liqueur, and wine.

    Fold in stiffly beaten egg white and pour the mixture into a shallow metal bowl. Freeze with occasional stirring or finish in an ice cream maker.

    For serving, shape the sorbet into balls with a scoop, place on dessert glasses, top each with a dollop of whipped cream, and garnish with lemon balm leaves and a small fruit skewer (kiwi and cocktail cherries).
