Red Berry Compote

Ingredients
- 500 g red currants
- 250 g sour cherries
- 250 g raspberries
- 1 cinnamon stick
- 4 tbsp sugar
- 30 g cornstarch
- 125 ml cherry juice
- 250 g chilled whipped cream
- strawberries (for garnish)

Wash the currants and remove stems. Wash and pit the sour cherries. Rinse the raspberries gently and rinse briefly.

Add the fruits with 500 ml water and the cinnamon stick to a pot, heat and simmer for about 5 minutes. Then remove the cherries and cinnamon stick with a slotted spoon. Pass the berries through a sieve, return them with the cinnamon stick and 2 tbsp sugar to the pot, stir and bring to a boil several times.

Whisk the cornstarch with the cherry juice, add it to the boiling fruit mixture and thicken while stirring. Fold in the cherries again, taste with the remaining sugar. Remove the cinnamon stick and let the compote cool. Spoon the red berry compote into glass bowls. Whip the cream until stiff, fill a piping bag and pipe onto the compote. Serve with additional whipped cream and garnish with strawberry halves.
