Coconut Sheet Cake

Ingredients
- 150 g vegan butter
- 4 tbsp apple sauce
- 1 pinch salt
- 100 g sugar
- 1 Tbsp vanilla sugar
- 100 g flour
- 2 tbsp Cornstarch
- 1 tsp Baking powder
- 200 g shredded coconut
- 50 ml coconut milk

Preheat the oven to 180°C fan. Line a sheet pan with parchment paper.

Beat the butter until soft using a hand mixer. Fold in the apple sauce, salt, sugar and vanilla sugar. Mix the flour with the cornstarch and baking powder, sift over the wet mixture and fold in. Stir in the shredded coconut and coconut milk, then spread the batter onto the sheet pan. Smooth the top and bake for about 35 minutes (test with a skewer). Remove from oven and cool. Let it cool completely on a wire rack before cutting into pieces.
