Ingredients
- 4 eggs
- 200 g coconut palm sugar
- 300 g coconut milk
- 0.5 tsp ground cinnamon
- 400 g wheat flour type 1050
- 2 tsp Baking powder
- 300 g shredded coconut
- 4 apples
- 0.5 tsp vanilla powder
- 4 egg whites
- Salt
- 100 g whole cane sugar
Instructions

Peel, halve and core the apples, then cut into wedges. Whisk together the eggs with coconut palm sugar, coconut milk and cinnamon. Mix in the flour, baking powder and 100 g shredded coconut, then fold into the egg mixture.

Spread the batter onto a greased baking sheet if needed and arrange the apple wedges on top.

Beat the egg whites with a pinch of salt until very stiff. Fold in the whole cane sugar and remaining shredded coconut. Gently spread this coconut mixture over the apple-topped batter. Bake in a preheated oven at 180 °C (fan: 160 °C; gas: level 2–3) for 40 minutes. Let the cake cool before cutting into pieces.
