Red Berry Compote

Ingredients

  • 600 g mixed berries (cherries, strawberries, black currants)
  • 400 ml black currant juice
  • 1 piece untreated lemon zest
  • 5 tbsp sugar (to taste)
  • lemon juice (to taste)
  • 1 vanilla bean (pulp)
  • 3 tsp cornstarch
  • mint (for garnish)
  • 200 g heavy cream
  • 1 Tbsp vanilla sugar

Instructions

    Wash the berries, pat dry, strip stems from currants, pit cherries, and chop strawberries if needed. Boil one‑third of the fruit with black currant juice, vanilla pulp, and lemon zest for 5 minutes, then strain through a sieve.

    Whisk cornstarch with 2 tbsp cold water until smooth, reheat the berry soup, and stir in the cornstarch mixture. Add the remaining fruit and simmer for another 2–3 minutes. Adjust sweetness with sugar and lemon juice. Set aside to cool. Beat the cream with vanilla sugar to half‑firm peaks.

    Fill serving bowls with the chilled compote, drizzle a bit of whipped cream on top, garnish with mint leaves, and serve with the remaining cream.
