Chocolate Walnut Cookies

Ingredients
- 250 g yogurt butter
- 125 g whole cane sugar
- 6 Eggs
- 300 g spelt flour
- 1 tsp Baking powder
- 200 g ground walnuts
- 2 egg yolks
- 200 g milk chocolate couverture
- 40 walnut halves
Instructions

Beat yogurt butter and whole cane sugar until fluffy. Gradually stir in 6 eggs.

Sift spelt flour and baking powder over the egg mixture and fold in the ground walnuts.

Spread the dough evenly on a baking sheet lined with parchment paper.

Separate the remaining eggs (reserve whites for another use). Whisk the yolks and brush them over the dough. Bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for about 20 minutes.

Remove the tray from the oven. While still hot, cut the dough into diamond shapes and let cool.

Melt the chocolate couverture over a double boiler on medium heat. Dip each cookie halfway into the melted chocolate and garnish with one walnut half.
