Ingredients

  • 500 g ripe strawberries
  • 2 tbsp lemon juice
  • 3 tbsp powdered sugar
  • 600 g low-fat quark
  • 1 vanilla bean (aroma)
  • 200 ml heavy cream (at least 30% fat)
  • 200 g pumpernickel bread
  • 250 ml strawberry juice
  • 1 packet red gelatin

    Wash, trim, and halve the strawberries. Blend half of them with 1 tbsp lemon juice and 1 tbsp powdered sugar until smooth, then strain through a fine sieve. Mix the remaining strawberries with the puree. Combine the quark with vanilla bean pulp, the rest of the lemon juice, and powdered sugar. Whip the cream stiffly and fold it into the quark mixture gradually. Roughly crumble the bread.

    Distribute one‑third of the quark mixture into four dessert bowls, spread smoothly, top with strawberries, then add another third of the quark mixture. Sprinkle the crumbled bread over the top and brush with the remaining quark‑cream blend. In a saucepan heat the strawberry juice with gelatin until it starts to thicken, remove from heat, and pour over the desserts once it begins to set. Refrigerate for at least an hour before serving chilled.
