Ingredients
- 500 g red beet
- 1 large apple
- 1 stalk Celery
- 3 tbsp apple cider vinegar
- 2 tbsp lemon juice
- 1 tsp liquid honey
- Salt
- Pepper (freshly ground)
- 0.5 tsp dried marjoram
- 80 g arugula
- 180 g feta
- 4 tbsp olive oil
Instructions

Peel the red beet, halve it and slice thinly or shave into ribbons. Wash the apple, quarter it, remove the core and dice small. Wash the celery, trim and dice small.

Whisk together vinegar, lemon juice, honey, salt, pepper and marjoram, then combine with the beet, apple and celery in a bowl. Let rest for about 15 minutes.

Wash, trim and dry the arugula. Cube the feta. Toss the salad with olive oil and season to taste. Gently fold in the arugula, plate on bowls and sprinkle with feta before serving.
