Vegan Blueberry Tart

Ingredients

  • Pflanzenöl (for the pan)
  • 175 g whole wheat flour
  • 75 g ground almonds
  • 2 tbsp vanilla sugar
  • 2 tbsp sugar
  • 1 tsp Baking Soda
  • 200 g soy yogurt
  • 3 tbsp soy cream
  • 1 tbsp Lemon Juice
  • 2 tbsp plant oil
  • 100 ml soy drink (soy milk) (vanilla)
  • 150 g white couverture chocolate
  • 250 g blueberries
  • mint (for garnish)

Instructions

    Preheat the oven to 200°C with fan and top heat. Brush the tart pan with oil.

    In a bowl combine whole wheat flour, almonds, vanilla sugar, sugar, and baking soda. Add soy yogurt, soy cream, lemon juice, and plant oil; mix into a smooth dough. Pour into the pan, level the surface, and bake for 15-20 minutes (test with a skewer). Remove from oven, let rest briefly, then take out of the pan and allow to cool completely.

    Heat the soy milk for the filling. Chop the chocolate and place in a bowl. While stirring, pour hot milk over until the chocolate melts. Let it cool to spreadable consistency.

    Rinse blueberries, pat dry, and sprinkle them over the cooled tart base. Spread the chocolate filling on top and garnish with mint before serving.
