Ingredients

  • 500 g white asparagus
  • 1 bundle radishes
  • 150 g sugar snap peas
  • 1 bundle chives
  • 4 tbsp white balsamic vinegar
  • 2 tsp sweet mustard
  • 2 tsp medium-hot mustard
  • Salt
  • Pepper
  • sugar
  • 4 tbsp rapeseed oil
  • 150 g roast beef slices

Instructions

    Peel the asparagus, trim the woody ends, slice the stalks diagonally into thin rounds while leaving the heads intact.

    Clean and slice the radishes and sugar snap peas. Rinse the chives and cut them into small rings.

    Whisk together the vinegar with both mustards, salt, pepper, and sugar. Gradually stir in the oil.

    Combine all other ingredients well and let the salad marinate for at least 10 minutes. Adjust seasoning if needed and serve with roast beef.
