Ingredients
- 100 g butter (room temperature)
- 100 g coconut blossom sugar
- 2 large eggs
- 225 g wheat flour type 1050
- 2 tsp Baking powder
- 0.5 tsp ground cinnamon
- 0.5 tsp ground ginger
- 200 g ripe bananas (1 large banana)
- 175 g raspberries
- 30 ml milk (3.5% fat)

Beat butter and coconut blossom sugar until creamy with a hand mixer. Add eggs one at a time, mixing well. Sift flour with baking powder into the butter mixture. Add spices and stir.

Peel the banana and mash it with a fork. Gently wash raspberries and pat dry. Mix fruit and milk into the batter. Pour into a prepared pan and smooth the top. Bake in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for about 45–50 minutes until golden brown (test with a skewer). Remove, cool, slice, and serve.
