Raspberry Marble Cake

Ingredients
- 250 g butter
- 220 g sugar
- 1 tsp lemon zest (unprocessed)
- 2 tbsp vanilla sugar
- 4 eggs
- 400 g flour
- 50 g ground almonds
- 50 g cornstarch
- 1 tsp Baking powder
- 140 ml milk
- 2 tbsp red berry powder (raspberry flavor)
- 200 g powdered sugar
- 2 tbsp raspberry juice
- colorful sprinkles in flower shape for garnish

Preheat the oven to 180°C fan. Grease a loaf pan and line with crumbs.

Cream butter, sugar, lemon zest, and vanilla sugar. Add eggs one at a time. Mix flour, almonds, cornstarch, and baking powder; fold into batter with milk. Set aside about one-third of the batter and mix in the berry powder.

Pour half of the light batter into the pan, smooth it out, add the pink batter on top, then finish with the remaining light batter. Use a fork to drag circular motions from bottom to top through the batter to create a marble pattern. Bake for 50-60 minutes, checking with a skewer. Cover the cake with greased parchment paper before it browns too much.

Remove the finished cake from the oven and let it cool. Then lift it out of the pan and allow it to cool completely on a rack.

Whisk powdered sugar with raspberry juice until smooth; coat the cooled cake with this glaze. Sprinkle with flower-shaped sprinkles and let dry. Slice and serve.
