A fresh whole wheat sponge cake made with wholesome ingredients.
Ingredients
- 200 g butter
- 200 g sugar
- 5 eggs (medium size)
- zest of 1/2 lemon
- a pinch salt
- 500 g whole wheat flour
- 1 tsp Baking powder
- 125 ml Milk (1.5% fat)
Instructions

Beat butter and sugar until fluffy. Add eggs, salt, lemon juice and zest. Gradually fold in sifted flour with baking powder and milk, then pour into a well-greased round cake pan and bake at medium heat for 50-60 minutes until golden brown.

Add 100 g raisins and chopped almonds to enhance the pastry.
