Raspberry Sorbet

Ingredients

  • 100 g sugar
  • 100 ml water
  • 40 ml still mineral water
  • 20 ml Grappa
  • 100 ml prosecco
  • 2 tsp lime juice
  • 200 g Raspberries
  • 150 g raspberries (for garnish)
  • 0.5 bunch fresh mint

Instructions

    Dissolve sugar and water in a small pot over low heat while stirring, then bring to medium heat and simmer for 4 minutes. Let the syrup cool. Mix mineral water with grappa, prosecco, 1 tsp lime juice and 1/3 of the syrup well, pour into a small metal bowl and place in the freezer for 5 hours.

    Clean raspberries, puree them, then strain through a sieve. Mix remaining syrup and lime juice, pour into another metal bowl and chill for 5 hours. Gently stir both sorbets with a hand whisk, layer them in a bowl, and use a spoon to fold them together several times. Return briefly to the freezer. Use an ice scoop to cut shapes, place on plates, and top with remaining raspberries and mint leaves.
