Ingredients
- 50 g dark chocolate (min. 65% cocoa content)
- 120 g soft butter
- 120 g sugar
- 2 Eggs
- 200 g Flour
- 1 tsp Baking powder
- 2 tbsp cocoa powder
- 50 ml milk
- 80 g soft butter
- 40 g sugar
- pink food coloring
- 80 g cream cheese
- 150 g powdered sugar
- 250 g powdered sugar
- 2 tbsp lemon juice
- heart (for decoration)
Instructions
-
1.
Preheat the oven to 180°C (356°F) with upper and lower heat. Line a mini muffin tin with paper cups.
-
2.
Chop the chocolate. Cream the soft butter with the sugar. Add the eggs and beat for 2 minutes until frothy. Stir in the chopped chocolate. Mix the flour with baking powder and cocoa powder, then alternately fold in the milk into the batter. Add more milk if needed. Pour the batter immediately into the cups and bake on the middle rack for 20-30 minutes. Test with a toothpick.
-
3.
Remove the cupcakes and cool them on a wire rack.
-
4.
For the frosting, cream the butter with sugar, add pink coloring, and fold in the cream cheese. Gradually whisk in powdered sugar until a piping‑ready consistency is achieved. Fill a piping bag fitted with a star tip and decorate the cupcakes.
-
5.
Whisk powdered sugar with lemon juice to make a glaze. Add just enough lemon juice for a firm glaze. Transfer to a small piping bag and pipe onto the cupcakes.
-
6.
Optionally place heart decorations on the frosting before serving.
