Raspberry Orange Tiramisu

A fresh take on tiramisu featuring ripe raspberries and orange zest. Try this delightful dessert from Spoonsparrow!

Ingredients

  • 6 sheets gelatin
  • 1 Organic Orange
  • 1 Vanilla bean
  • 750 g Alpro Cuisine cream
  • 100 g powdered sugar
  • 2 tbsp Grand Marnier (or orange juice)
  • 100 ml strong coffee
  • about 12 ladyfingers
  • 200 g fresh or frozen raspberries
  • cocoa powder
  • optional: crushed amaretti

Instructions

    Dissolve the gelatin according to package instructions. Wash and pat dry the orange, then finely grate its zest. Split the vanilla bean lengthwise and scrape out the seeds. Beat the Alpro Cuisine cream, powdered sugar, grated orange zest, and vanilla seeds with an electric mixer on ice until almost firm. Take 5 tbsp of this mixture and whisk in the dissolved gelatin. Add the rest of the mixture while stirring gently to fold in.

    Combine the Grand Marnier (or orange juice) with the coffee.

    Layer a sheet of ladyfingers into glasses, drizzle with the coffee mixture. Pipe a layer of the cream onto the ladyfingers, then spread a layer of raspberries on top.

    Repeat the process until all ladyfingers, cream and berries are used; the glasses should be almost full.

    Finish by dusting everything thickly with cocoa powder and, if desired, crushed amaretti cookies.
