Strawberry Tiramisu with Butter Cookies

Ingredients
- 400 g Strawberries
- 2 Eggs
- 100 g sugar
- 2 tbsp vanilla sugar
- 400 g mascarpone
- 100 ml whipping cream
- 200 ml cold coffee
- 40 ml brandy (or Marsala or almond liqueur)
- 250 g butter cookies

Clean, wash, pat dry the strawberries on paper towels and quarter them.

Separate the eggs. Whisk the yolks with 50 g sugar and vanilla sugar over a hot water bath until creamy (best with an electric mixer). Remove from heat, cool slightly, then fold in mascarpone gradually. Beat the egg whites with the remaining sugar until stiff peaks form and fold into the cream mixture. Whip the cream to stiff peaks and gently fold it in.

Mix the coffee with the brandy. Cut the butter cookies in half and briefly dip them in the coffee mixture. Layer the cookies, strawberries, and cream alternately in glasses. Chill the strawberry tiramisu for 1–2 hours.
