Pineapple poppy seed muffins

Ingredients
- 100 g butter
- 100 g sugar
- 3 eggs
- Salt
- 1 can pineapple (approx 550 g drained weight)
- 80 g ground poppy seeds
- 300 g flour
- 250 ml buttermilk
- 2 tsp Baking powder
- 100 tbsp powdered sugar
- 1 tbsp Lemon Juice
- candied fruits (pineapple, papaya...)
- 1 muffin tin (12 cavities)
- 12 paper liners

Drain the pineapple and cut the fruit into cubes.

Melt the butter and let it cool slightly. Mix the liquid butter with sugar, eggs, and a pinch of salt, then stir in the buttermilk. In another bowl combine flour, baking powder, and poppy seeds; briefly fold into the wet mixture until dry ingredients are moist, then fold in pineapple cubes.

Place paper liners in the muffin tin or grease the cavities and fill them 2/3 full with batter. Bake in a preheated oven at 180°C for about 25–30 minutes. Remove, let cool slightly in the pan, then take out the muffins to cool completely.

For decoration whisk powdered sugar with lemon juice into a thick glaze, brush over muffins, and top with candied fruit strips; allow to dry.
