  • 250 g almond kernels
  • 100 g dark chocolate
  • 4 egg whites
  • 200 g fine sugar
  • 350 g hazelnuts

Instructions

    Grind almonds with skins in a nut grinder. Grate chocolate finely. Beat egg whites into stiff peaks, gradually adding sugar and continuing until the mixture is stiff and shiny. Fold almonds and chocolate into the meringue using a whisk. Preheat oven to 190°C. Place baking paper on a tray. Using two damp teaspoons, scoop small mounds from the foam and place them on the baking paper.

    Grind hazelnuts in the grinder. Beat egg whites into stiff peaks, gradually adding sugar until the mixture is stiff. Fold hazelnuts into the meringue with a whisk. With two damp teaspoons, scoop small mounds from the foam and set them atop the chocolate macarons. Bake the chocolate-nut macarons on the middle rack of the oven for about 16 minutes. Check with light finger pressure that the mixture no longer feels wet. When dry, let the finished macarons cool on a wire rack.
