Raspberry Jam with Lavender

Ingredients

  • 1 kg red raspberries
  • 0.125 l water
  • 50 g sugar
  • gelatin powder (ratio 1:1 to the extracted juice)
  • 0.125 l sherry
  • 1 bundle lavender buds

Instructions

    Wash the raspberries, strip them from their stems, and bring them with water and sugar to a boil; simmer for several minutes.

    Pour the fruit and its juice through a cheesecloth, allow it to drain well, then press out the remaining liquid. Measure the juice volume, add an equal amount of gelatin powder, and simmer the mixture for 3 minutes until sparkling.

    Stir in the sherry and the lavender buds, immediately fill hot-washed jars, let them cool upside down for 15 minutes, then flip them over to finish cooling.
