Currant Jam with Peach

Ingredients
- 500 g red currants
- 1 untreated orange (juice and zest)
- 1 kg peaches
- 500 g gelatin sugar (2:1)
- 1 star anise
- 1 tsp peppercorns
- 3 cloves of spice cloves
- 20 ml gin

Wash the currants, strip them from the stems and puree. Sift through a fine sieve, collecting the fruit purée in a pot. Add the orange juice with zest.

Parboil the peaches, shock, peel, halve, pit and dice the flesh. Add to the currant purée and the sugar. Place the star anise, peppercorns and spice cloves in a spice sachet and add them. Stir and bring to a boil. Simmer for 5 minutes, then remove the spices, refine with gin and fill prepared jars with the jam. Let it cool well sealed.
