Red Currant Jam

Ingredients

  • 1 kg red currants
  • 2 tbsp sugar
  • 1 vanilla pod (aroma)
  • 800 g gelatine sugar (1:1)

Instructions

    Wash the currants, remove stems and leaves, then combine with sugar, vanilla aroma and 150 ml water in a pot and bring to a boil. Simmer over medium heat for 10 minutes, then strain through a cloth-lined sieve into a pot and let drain well.

    Squeeze out the juice from the fruit, measure it, and add an equal amount of gelatine sugar. Bring to a boil and simmer for about 4 minutes until sparkling. Fill clean jars with the mixture, turn them upside down for 10 minutes, then leave to cool. Flip the jars back over and store in a cool, dark place.
