  • 1 kg raspberries
  • 1 lemon (juice)
  • 1 vanilla pod
  • 500 g gelatin sugar (2:1)

    Wash the raspberries gently if needed, as they can lose juice and absorb water. Mix the berries with lemon juice, split vanilla pod, and gelatin sugar; let sit for about 30 minutes.

    Stir continuously while bringing to a boil, then simmer for approximately 4 minutes. Perform a gel test, remove from heat, discard the vanilla pod. Fill hot jars to the brim and seal immediately with screw caps. Allow to cool.
