- 1 kg raspberries
- 1 lemon (juice)
- 1 Vanilla bean
- 500 g pectin sugar (2:1)

Rinse the raspberries and wash only if necessary, as they lose juice and absorb water. Mix the berries with lemon juice, split vanilla bean, and pectin sugar, then let sit for about 30 minutes before bringing to a boil while stirring.

Cook for about 4 minutes while continuously stirring. Perform a gel test; remove from heat, discard the vanilla bean, fill hot jars to the brim, seal immediately with screw caps, and allow to cool.
