Ingredients

  • 1 kg raspberries
  • 1 lemon (juice)
  • 1 vanilla pod
  • 500 g invert sugar (2:1)

Instructions

    Wash the raspberries only if absolutely necessary, as they lose juice and absorb water. Mix the berries with lemon juice, split vanilla pod, and invert sugar; let sit for about 30 minutes.

    Then stir and bring to a boil. Boil for about 4 minutes while stirring constantly. Test for setting, remove from heat, and fish out the vanilla pod again.

    Fill hot, rinsed jars to the brim and seal immediately with screw caps. Let cool.
