Ingredients

  • 1 kg strawberries
  • 1 lemon (juice)
  • 1 kg jelly sugar
  • 2 handfuls organic rose petals (unsprayed)

    Wash, trim, and cut the strawberries into pieces. Place them in a pot, add the lemon juice and jelly sugar, stirring well. Bring to a boil while stirring. Simmer for about 4 minutes until bubbling. Add the rose petals and avoid over-purifying with the stick blender.

    For the gel test, drop a few drops of jam onto a cold plate. If it sets, the jam is ready for bottling.

    Fill preheated, hot-washed jars almost to the brim. Seal tightly with lids and let cool.
