Ingredients

  • 1 kg raspberries
  • 1 unpeeled lemon (juice and zest)
  • 80 ml raspberry liqueur
  • 1 vanilla bean (pulp)
  • 500 g invert sugar (2:1)

Instructions

    Mix the raspberries with lemon juice, lemon zest, raspberry liqueur, and vanilla pulp. Stir in the sugar until well combined and bring to a boil in a pot, then simmer for an additional 4 minutes.

    Divide into four prepared jars, seal tightly, place upside down for 10 minutes, flip back over, and store cool.
