Ingredients

  • 1 kg raspberries
  • 1 untreated lemon (juice and zest)
  • 500 g gelesugar (2:1)
  • 1 vanilla bean (optional)
  • 20 ml raspberry liqueur

Instructions

    Wash raspberries and mix with lemon juice, zest and vanilla essence; transfer to a pot, bring to boil, add gelesugar and simmer for 1-3 minutes until sparkling. Add raspberry liqueur, stir well, carefully fill prepared jars up to the rim, seal immediately. Place jars on lids, flip after about 10 min and let cool.

    For raspberries, it also tastes very good to replace 1/3 of the berries with pureed peach flesh.
