Ingredients

  • 1 kg raspberries
  • 75 g cocoa nibs (cocoa bean breakage)
  • 500 g gelatine sugar (2:1)

    Wash the raspberries, rinse if necessary, and mix them with the cocoa nibs and sugar in a large pot. Bring to a boil while stirring constantly. Let it bubble for about 4 minutes, stirring continuously. Skim off any foam and perform a gel test. Then pour the boiling hot mixture into clean jars until full. Leave the jars upside down to cool.
